Leafy Greens
Leafy greens like kale, watercress, and spinach are some of the most nutrient-rich foods in our diets. They have incredible amounts of vitamin C, K and A, and lots of minerals. Being so nutrient-dense, it’s normal that they have many anti-nutrients too, like oxalates.
For superfoods, such as kale, you might think the more, the better, but the opposite is true. A cup of leafy greens a day is more than enough to meet your dietary needs. More than that can cause kidney stones.
